Nothing elicits the Christmas spirit more than the gas and indigestion from eating chicken enchiladas, chile rellenos, rice and beans, and all the chips and salsa one can devour. Sorry I missed it as well … sounds delicious!! Actually, chicken enchilada is my favorite Mexican dish.

I would say it’s best if one has a “small group” if the menu is Mexican. :)

I’m with Greg, can’t beat Mexican food any time.

you certainly helped decide what we’re having for dinner tonight, thanks. i only hope we haven’t already eaten the last of our green chile stash.

i need to learn to make rellenos, the husband loves them.

So, after “Yuck” one day, you were up to Mexican food the next. It must have been quite a recovery. : ) Glad your feeling better, and everything (except the chile rellenos) sounds delicious.

  5. Randy says:

Stephanie, you need to try the chicken enchiladas!
